Coconut - Craisin Cookies
My quest for eggless cookies and cakes have resulted in my collection of cookbooks and only a handful of recipes from the recipe galore. Hence, I have short term memory when it comes to my cookbooks. Only during few occasions, I remember them accidentally. During one of those moments, when I was not being under the spell of amnesia, I came across the recipe for vanilla hearts, vanilla cookies from my cookbook. At the same time, I saw a recipe of mango-coconut cookies on Hooked on heat. There were some similarities between the two recipes like some of the ingredients used and the proportions in which they were used. Mango–coconut cookies attracted me more and I had to try them since they contained coconut. So, I came up with a recipe with slight variations. My experiment resulted in crispy, crunchy, delicious and above all eggless cookies. They tasted so yummy and reminded me those coconut cookies we used to eat in India. I got a dozen of bite sized cookies from the following ingredients.
Ingredients used:
All purpose flour / Maida – ¾ cup
Sugar – ¼ cup
Melted butter – ¼ cup
Grated coconut – ¼ cup (Thaw if using frozen coconut)
Dry craisins – ¼ cup
Milk – 1- 2 tsp
Preparation:
Put melted butter and sugar in a bowl and mix them until well incorporated.
Form a soft adding flour, grated coconut, craisins and milk to the sugar/ butter mixture.
Divide the dough into 12 equal portions.
Bake them in a preheated oven at 375 degrees until they turn golden in color.
